Tomato Sauce and Grilled Chicken Breasts

Ingredients for Grilled Chicken Breasts

For making the grilled chicken breasts make sure you have 4 chicken breast halves, 4 yellow tomatoes, 1 tablespoon of balsamic vinegar, 2 minced garlic cloves, 1 and 1/2 tablespoons of extra-virgin olive oil, 1/4 teaspoon of freshly powdered black pepper, and 3/4 teaspoon of salt. You also need 3 tablespoons of chopped fresh basil, 1 tablespoon of chopped fresh thyme, and 2 tablespoons of chopped fresh Italian parsley. The chicken should be skinless and boneless. Remove the seeds from the tomatoes and cut them into halves.

Method of Preparing Grilled Chicken Breasts

First of all get a charcoal grill ready and prepare hot fire. You can also use a broiler or a gas grill. In that case just preheat it. Smear some cooking spray on a broiler pan or a grill rack. Make sure that you place the cooking rack about 6 inches away from the source of heat. Take a broiler pan and line it with aluminum foil. Now place the tomatoes on it with the skin side up. Broil or grill the tomatoes. When the skin of the tomatoes starts becoming black, keep them in a bowl and cover with a cling wrap. After 10 minutes the skin will become loose.

Heat olive oil in a frying pan, over medium heat. Stir in the garlic and then sauté for 1 minute until it becomes soft. Keep it away from the heat for some time. Peel and core the tomatoes and blend in a mixer along with the vinegar, oil, and garlic. Then add 1/2 teaspoon of salt, 1/8 teaspoon of pepper, and a tablespoon of basil. Dust the remaining salt and pepper on the chicken breasts. Coat the chicken with a mixture of basil, thyme, and parsley. Broil or grill the chicken. Serve with the yellow tomato sauce.
