Tasty Vegeteranian Pancakes

Ingredients:
1 1/4 cup of chickpea flour
1/2 tsp of salt
1/2 tsp of red chili powder
1/4 cup of finely chopped onion
1 tsp of very finely chopped ginger
2-3 green chilies, very finely chopped
1 medium sized tomato, finely diced
1 tbsp of green coriander leaves, finely chopped
1 tsp of coriander powder
1/2 cup of cooking oil for frying
Method:
Put the chickpea flour in a large mixing bowl. Add about 1 cup of water to the flour and stir, using a wooden spatula to make a smooth batter. When you whisk the batter be careful that there are no lumps. Now add all the other ingredients to the batter and mix thoroughly. Set the bowl aside for 10 to 15 minutes. Mount a heavy bottomed skillet on medium heat. Put some oil on the pan and heat it. When the pan is heated pour a cup full of the batter in the center of the pan and spread it like an omlette. Let it cook for about 2 to 3 minutes before turning the side. Now cook on the other side similarly for another 2-3 minutes. When done transfer of paper towels to soak the excess oil. Repeat the same process for frying each of the pancakes.

Serve the pancakes hot with mint or coriander sauce.



Zucchini Pancakes
Serving: 3 persons
Prep Time: 15 minutes
Cooking Time: 30 minutes

Ingredients:



1 cup of chickpea flour
1/4 cup of rice flour
Salt as per taste
3/4 cup of water
1/2 tsp of cumin seeds
1 tsp of finely chopped green chilies
1 cup of shredded zucchini
1 tbsp of chopped coriander leaves
Oil for cooking

Method:




Take a bowl and in it mix together the chickpea and rice flour along with the salt and cumin seeds. Add about 1 cup of water to the flour and stir, using a wooden spatula to make a smooth batter. When you whisk the batter be careful that there are no lumps. Now add the green chilies, coriander, shredded zucchini to the batter and mix well. Heat a pan over a medium heat with one tablespoon of oil in it.

When the pan has become hot pour 1/2 cup of the batter and spread into a even layer like a pancake. Let it cook for about 2 to 3 minutes before turning the side. Now cook on the other side similarly for another 2-3 minutes. When done transfer of paper towels to soak the excess oil. Repeat the same process for frying each of the pancakes.

Serve the pancakes hot with a sauce of your choice.
