Sweet potato custard is a special dessert for special occasions. This is a spiced and sweet desert. Instead of the normal sweet desserts you can enjoy a special taste with this sweet potato custard.
Whole milk – one and Â¾ cups
Large eggs – three
Pureed sweet potato – one cup
Granulated sugar – 13 cup
Ground cinnamon – half teaspoon
Nutmeg – grounded in to pieces
Cloves- grounded in to pieces
Ginger- grounded in to pieces
Salt – one pinch
Pre heat the oven to a temperature of 350 degree. Now take six 5 ounce or 6 ounce custard cups and grease them with butter. Set these custard cups on a roasting pan and keep aside.
Heat the milk till it becomes very hot and keep it aside. Take a bowl and to this add three large eggs and beat then lightly. Now add the pureed one cup of sweet potato in to the beaten egg followed by 13 cup of sugar, a pinch of salt, half teaspoon cinnamon and pieces of cloves, nutmegs and ginger. Mix them well and whisk the milk in to this mixture and combine them till you get a well blended mixture. Now transfer the contents in to the greased custard cups.
Take six cups of water and heat it in low flame. Keep the roasting pan with six cup in the oven and then slowly fill the roasting pan with hot water so that water will reach up to half the height of the cup. Then bake the custard for about twenty five to thirty minutes or till the edges of the custard becomes firm and still the center of the custard jiggle lightly. If you have large custard cups then you can extend the time or if the cups are small check the custard before.
Get the custard cups back from the oven and take them out of the water. Place these cups on a wire rack and allow it to cool. When the custard gets cooled use a plastic wrap to cover them and refrigerate it for one hour. Now your sweet potato custard is ready to serve.
