Spicy Chicken Recipe

1 kg of chicken, skinless and boneless and cut into medium pieces
200 grams of curd
2 tbsp of butter
1 cup of onion paste
3 tbsp of ginger paste
3 tsp of garlic paste
1 tbsp of red chili powder
4 cloves
4 cardamoms
1 inch of cinnamon
A pinch of nutmeg
A pinch of mace
Salt to taste
1/2 tsp of sugar
5 tbsp of cooking oil

Wash the chicken pieces thoroughly under running water. Pat dry. Keep in a bowl. Take a mortar and pestle and add the cinnamon, cardamom and cloves to it and grind them to make a powder. Now add the curd, red chili powder, salt, sugar, onion paste, ginger and garlic pastes to the chicken pieces and combine all ingredients together. Cover and transfer the bowl to the refrigerator. Marinate the chicken for about 2-2 1/2 hours. When chicken has been thoroughly marinated take it out from the refrigerator and keep aside. Mount a deep-bottomed frying pan on medium heat. Add the cooking oil and when the oil is heated add the mixture of the cardamom, cinnamon and cloves powder to the oil. When the spices have stopped sputtering add in the chicken pieces and cook on medium heat. Cover the pan and let cook for about 10 minutes before removing the lid and stirring the chicken pieces.

Cover and cook the chicken pieces this way for about 30-35 minutes. Keep stirring in between at regular intervals to avoid charring the chicken pieces.

Check if the chicken pieces have become tender. If it has become so add in the mace and the nutmeg and combine. Before removing from heat add the two tablespoons of butter to the chicken and combine well. Remove from heat to a serving bowl and serve with Butter Naan or Pulao.
