Tapas are foods that can be eaten at any time. It can be used as starter or as dish for your meals. Here are some recipes for you.

Marinated Olives

Olives are black shiny fruits and you can use them for making marinated olives. Take about one kg olives and wash them well and split using a wooden spoon or hammer. Then put the splits of olive in to a bowl and add water to cover the fruit splits. You have to change the water every morning till the olives lost their bitterness and this process may take five to seven days.

Now in a large jar or in a plastic container add a sprig each of thyme oregano, one lemon sliced in circular shapes, five cloves of garlic, one bay leaf, a small piece of fennel and one teaspoon of peppercorns.  Then mix four parts of water with one part of vinegar and add this liquid in to the jar. Afterwards you need to add the prepared olives to this jar and mix them well. Close the jar with airtight lids and keep them for about one month. This helps to blend the flavors well.

Chickpea Salad

Take half kg dry chickpeas and soak then in water for over night. Boil the chickpeas in pressure cooker for about ten minutes on the next day or you can boil them in pan for about one hour. Drain the chickpeas and rinse them in water. Then get a tomato and blanch it to remove the seeds and skin. Then cut the tomato in to pieces of cubical shape and keep the tomato pieces in a bowl. Then add four red peppers called Spanish pimientos del piquillo to the bowl. If you find it difficult to get this then roast the red peppers for twenty minutes and then cut them in to stripes.

Make small squares out of 50 grams of cured ham and add to the tomato pieces. Add one small clove of garlic to the bowl. Now you have to dress the contents in the bowl with one teaspoon each of white wine vinegar and extra vinegar oil. Season the contents with pepper and salt. Then add the boiled chickpeas and one hard boiled egg cut in to cubes in to the bowl and mix well. Keep the salad in a salad plate and garnish it with parsley and spring onion. Your salad is now ready.
