Refreshing Vegetable Juice Recipes

vegetable-juice The heat outside is killing. A sure shot way of getting refreshed is a glass of juice, which is not just a coolant but is also fortified with the necessary minerals and vitamins. Here are two such juice recipes that are bound to be an excellent thirst-quencher:

CUCUMBER AND GINGER JUICE



Serving: 4 persons
Prep Time: 10 minutes

Ingredients



6 Large cucumbers
3 cups of water
4-5 inch of fresh root ginger
Half tray of ice cubes
4 sticks of Celery
2 medium cloves of Garlic

Method




Wash the cucumbers and the ginger thoroughly. Peel them and chop them into small pieces. Chop the celery into small pieces. Place all the ingredients into the blender and blend. Serve immediately, in tall glasses.

This drink is an excellent coolant and being rich in potassium helps to fight fatigue and muscle weakness.

CORIANDER AND MINT JUICE

Serving: 4 persons
Prep Time: 10 minutes

Ingredients

15-16 fresh mint leaves
15-16 fresh coriander leaves
1/2 cup of fresh lime juice
1 cup of sugar
2 cups of water
2 cups of crushed ice
Few mint leaves and lime slices, for garnishing

Method

Cut the mint leaves and the coriander leaves using a pair of scissors and put them in a bowl. Pour the lime juice in the bowl and let the leaves soak in the juice for at least 3 hours. Make the sugar syrup using the sugar and water.

Mount a pan with the two cups of water on medium heat. When the water starts boiling add in the sugar. Use a spatula to combine. Let this boil for about 15 minutes. When the mixture begins to change color and is reduced to about half its previous quantity remove from the heat and let it cool at room temperature.

After three hours transfer the lime juice and the mint and coriander leaves to a blender. Extract the juice and throw away the leaves mass. Mix the juice extract with the sugar syrup. Taste to check the right proportion. Transfer this into the refrigerator and chill for about an hour. Serve in tall glasses with crushed ice, garnished with a mint leaf and a slice of lemon.

Being high in calcium, anti-oxidants, and vitamin C & A, this juice serves as a very good drink for the summers.
