Ingredients:



2 cups of sugar
2 cups of mineral water
2 quarts of raspberries, hulled and sliced
1/4 cup of freshly made lime juice
1/2 cup of white corn syrup

Method:
Take the 2 cups of sugar and the water in a medium saucepan and bring them slowly to a boil over medium-high heat. Now reduce the heat and let the mixture simmer, without stirring, for about 3 minutes. Set aside to cool completely at room temperature. In the mean time transfer the raspberries and the lime juice to a food processor and process till it forms a smooth puree. Now press the puree through a sieve so as to remove the seeds. Combine cooled sugar syrup with the raspberry puree. Add in the corn syrup and stir well the mixture. Pour this mixture into an ice cream maker and freeze as per the manufacturer’s instructions.



Sugar Free Raspberry Sorbet Recipe

Ingredients:

3 packages of frozen unsweetened raspberries, thawed
3/4 cup of orange juice, freshly made
1 tbsp of freshly made lemon juice
1 cup of any low calorie Sweetener, granulated
1 tbsp of grated orange zest

For Garnishing:

Strips of orange rind

Method:

Place the raspberries in a food processor for 15 seconds before adding in the orange juice, the lemon juice, and the sweetener. Blend the mixture for 30 seconds to form a smooth puree. Stop in between to scrape the sides down. Then pass the mixture through a wire mesh strainer into a bowl, pressing the mixture with the back of a spoon against the strainer to squeeze out the juice. Get rid of the seeds and the pulp. Now add in the orange zest and stir the mixture. Then pour this mixture into an ice cream maker and freeze as per the manufacturer’s instructions. Serve on serving dishes garnishing with the strips of orange rind.
