Kids having diabetes must take extra care to avoid foods that are rich in carbohydrates. As carbohydrate may increase the level of sugar in their blood and may harm them. Here are some recipes that can be offered to kids having diabetes.

Vegetable Skillet Frittata

Keep a skillet in a pre-heated broiler and add a tablespoon light margarine in to the skillet. Now add one and a half cup finely chopped potatoes that are fried until browned to this skillet followed by one and a half cup finely chopped onion, half cup finely chopped red pepper and one cup broccoli florets. Sauté the vegetables and hash browns well for about five minutes and then spread them evenly over the skillet. Now you have to pour one and a half cup egg white over this spread and cook the egg till the entire content gets set. Then top the frittata with ¾ cup light cheddar cheese and broil the contents till the cheese gets melted.

Now your kid’s vegetable skillet frittata is ready and you can make four serving from this and each serving provide you with 22 gram carbohydrates and 8 milligram cholesterol. You can also include half cup chicken, turkey or ham in to this and it will increase the level of protein in the frittata.

Grilled Cheese Sandwich

Grilled cheese sandwich may be one of the favorite snacks of your kid and due to the diabetes problem you may be prohibiting your kid from taking a cheese sandwich. This sandwich will add only 25 gram carbohydrate and 31 milligram cholesterol and this will also provide protein, sodium, calcium and iron in to your kid’s diet.

Take two pieces of whole wheat bread and keep one oz light cheddar cheese over one slice of bread and close it with the other slice. Take one tablespoon skim milk and two tablespoon egg substitute in a bowl and mix them well and dip the bread in this mixture. Place a non stick pan over the stove and melt one and a half teaspoon light margarine in it. Then keep the bread dipped in skim milk mixture on the pan and cook it till it becomes golden brown. It may take almost 3 minutes and now your kid’s sandwich is ready.
