This is a low calorie soup that can be made in twenty minutes time if you have the broth and canned tomatoes with you. Keep a large sauce pan on the stove and coat it with cooking spray. To this add one clove finely chopped garlic and sautÃ© it for one minute in medium heat. Then add one pound of bite sized cut chicken breast and half cup finely chopped onion. Also add one teaspoon cumin powder and mix them well with garlic and cook for another 5 minutes or till the chicken turns its color and so the onions becomes soft. To this mixture add one cup water and 1 14 oz can chicken broth, 1 15 oz diced tomatoes with out draining and 1 15 oz can undrained stewed tomatoes of Mexican style.
Now boil the entire contents for about 10 minutes in low flame. You can garnish the soup with shredded part-skim mozzarella cheese, crushed baked tortilla chips and diced cilantro. Your low calorie chicken soup of about 155 calorie is now ready to serve.
