Healthy Meal With Eggplant Sandwich

Eggplant Sandwich The eggplant, a native of Asia, is now grown all over the world. The purple, white and green colored vegetables are a delight not only for your taste buds, but your body will also immensely benefit from the large number of nutrients present in this vegetable.

Eggplant is a rich source of fiber, potassium, manganese, copper, magnesium, thiamine, vitamin B6, folate and niacin. Eggplant is also a powerful source of antioxidants. Nasunin, the anthocyanin or the pigment that gives eggplant its purple color, is noted for its powerful antioxidant property. Studies have found that nasunin could prevent degeneration of the brain cells. Moreover, the antioxidant properties of the phenolic compounds found in eggplant could protect our bodies from several viral and bacterial infections. These plant compounds can even inhibit proliferation of cancerous cells. Eggplant is also beneficial for your heart. The antioxidant compounds present in this vegetable could lower blood cholesterol and prevent deposition of cholesterol in the walls of the coronary arteries.

Eggplant sandwich

To prepare eggplant sandwich, you need one medium sized eggplant, brown bread slices, one teaspoon of finely chopped garlic, two tablespoons of cheddar cheese, two teaspoons of olive oil, one teaspoon of finely chopped olives, five to six small slices of tomatoes, a handful of coriander or mint leaves and salt and pepper to taste.

Preparing eggplant sandwich
Cut the eggplant into two halves. Brush a little olive oil on all the sides of the eggplant slices. Now grill the eggplant slices in a preheated oven. You can also grill the eggplant on fire directly. Your grilling process will be over within three to four minutes.

Mash the grilled eggplant slices. Mix the garlic, cheese, olives, tomatoes and the coriander or mint leaves in a bowl. Now add the mashed eggplant to these ingredients and blend them properly. Add salt and pepper according to taste.

Spread the eggplant mix on a bread slice and cover it with another bread slice. Your eggplant sandwich is now ready.
