Green Tomato Cake
Green tomato cake is a different type of cake that you can make easily. It is really a moist and spicy cake. The following steps may help you to make green tomato cake.
Tips to Make Green Tomato Cake
Take some green tomatoes and wash them to wipe out the dirt and pesticide residues. Then chop the tomatoes finely and get four cups of chopped green tomatoes. Take these tomatoes in a bowl and sprinkle it with one tablespoon salt. Keep it for 10 minutes and then wash off the salt by putting it in a colander and by pouring cold water.
Now preheat the oven at 350 degree F and prepare a baking pan by greasing it with little butter and dusting some flour over it.
In another bowl take half cup butter, two cups of sugar and mix them well. Then add two eggs to the butter mixture and beat them well to get a creamy mixture. You can also add vanilla essence if desired. Then keep this aside and take another bowl and mix two cups of all purpose flour, one teaspoon powdered cinnamon, one teaspoon nutmeg powder, one teaspoon baking soda and Â¼ teaspoon salt. Sift this mixture to avoid lumps and then add half cup of raisins and half cup of chopped walnuts. Now you can add this powder mixture in to the cream with constant stirring. Combine the entire mixture till you get very stiff dough.
Combine the chopped green tomatoes with this mixture and mix well. Now transfer the entire mixture in to the prepared baking pan and bake it for about 45 minutes or till the knife inserted to the center of the cake come out clean. If you wish to have a coconut flavor then add shredded coconut on top of the mixture and then bake.
You can garnish your cake either with cream or caramel cheese or with confectioner’s sugar and keep it in refrigerator for cooling. Now you can serve your spicy and sweet cake.
