Fruit Flavored Sorbets

Ingredients:



1 tbsp of finely diced lemon peel
1 cup of water
1/2 cup of sugar
1/2 cup of freshly made lemon juice
1/2 cup of carbonated mineral water

For garnishing:



6 strips of lemon zest

Method:




Stir together the diced lemon peel, the water and the sugar in a saucepan. Mount the saucepan on medium heat and slowly bring it to a boil. Now reduce the heat and let it simmer for about 5 minutes. Remove from the heat, and let the mixture be cooled at room temperature. Now take a large bowl and in it stir together the lemon syrup with the peel, lemon juice and the mineral water.

Mango Sorbet
Prep Time: 15 Minutes
Cooking Time: 1 day
Serving: 6 persons

Ingredients:

4 ripe mangoes; peeled, seeded, and cubed
1 cup of simple syrup
3 tbsp of freshly made lime juice

Method:
Transfer the cubed mangoes to a food processor, and process. Make sure that the puree is smooth without any lumps. Now add in the simple syrup and the lime juice, and process. Pour the mixture into an ice cream maker, and freeze as per the manufacturer’s instructions.

Strawberry Sorbet
Prep Time:
1 hour
Cook Time: 10 minutes
Serving: 6 persons

Ingredients:

1/3 cup of sugar
1 1/4 cup of water
3 1/2 cups of fresh strawberries; hulled, pureed, and strained
1 tsp of freshly made lemon juice
2 tbsp of berry wine

Method:

Take the sugar and water in a small saucepan, and bring them to a boil on medium heat. Reduce the heat and let the liquid simmer, uncovered, for about 5 minutes. When the mixture reduces in volume and thickens remove from the heat and chill the syrup for at least 30 minutes till it has cooled slightly. Now in a blender process together the syrup, the strawberries, lemon juice, and the wine until the mixture is smooth. Pour the mixture into an ice cream maker, and freeze as per the manufacturer’s instructions.
