Cold Potato-Leek Soup
Soup is something that refreshes you while adding nutrients. But it will be difficult to take hot sups during summer. If it is a cold soup then it will be an ideal one to enjoy in the hot summer. The only difficultly that you may face at the time of making the soup is to clean the leeks. Leeks usually grow in sandy soil and hence it may trap a lot of soil and dirt in between their leaves which are multi layered. So you need to wash them thoroughly before cooking. So wash them thoroughly under running water and then soak the sliced leeks in clean water for about ten minutes. This may help you to settle the grit and thus makes your soup free of grit.
Leeks – four fresh leeks
Onion – one medium sized onion
Olive oil – one tablespoon
Potatoes – four medium sized potatoes that are peeled and sliced in to fine pieces
Chicken broth – unsalted four cups of broth
Mace – Â¼ teaspoon
Skim milk – two cups of evaporated and chilled skim milk
Chives – six tablespoon of chopped chives
Black pepper – a pinch of freshly grounded black pepper
Preparation of Cold Potato Leek Soup
Add leeks and onion to a blender or food processor and blend them till it becomes finely chopped. Or chop them in to fine pieces. Keep these chopped pieces aside. Then get a large saucepan and heat it. Add one tablespoon of olive oil to this pan and heat it. SautÃ© the chopped leeks and onion in olive oil till it becomes golden brown. It may take almost seven minutes. Then add finely sliced potatoes, four cups of chicken broth and Â¼ teaspoon of mace to the pan. Cook the entire contents in medium heat till the potatoes become soft and tender.
Now add the whole contents in to a blender and mix them well or until it gives a smooth mixture. Then transfer the smooth mixture to a large bowl and keep it in refrigerator for cooling. Just before serving the soup you have to mix the evaporated skim milk with the soup. Pour the soup to serving bowls and then garnish it with chopped chives and grounded pepper. Serve the potato leek salad cold.
