Chicken soup with matzo balls is a traditional Jewish dish. The Jews consider this chicken soup as a powerful health food. To prepare chicken soup with matzo balls you need one kilogram chicken, one large carrot, two medium sized onions, 2 celery stalks, two tablespoons of fresh parsley, two tablespoons of fresh thyme, one teaspoon of whole peppercorns and salt to taste.

Method of preparation
Discard the chicken skin and the fats. Use all the other parts of the chicken, including the wings, legs, feet and heart to make the soup. Wash and cut the carrot, onions and celery stalks in thick slices. Heat about 4 liters of water in a pot. As soon as the water starts boiling, put the chicken parts and all the other ingredients in the pot. Cover the pot with a lid and allow the soup to simmer on medium heat. Occasionally stir the soup. After about 1 ½ hours, remove the pot from the fire.

Matzo ball preparation
