In order to make the fresh blueberry sauce you will need 3/4 cup of fresh blueberries, 2 tablespoons of fresh lemon juice, and 1/4 cup of blueberry preserves. For the lemon custards, make sure you have 1/2 cup soft of silken tofu, 2 teaspoons of brown sugar, 3 eggs, 2 tablespoons of light brown sugar, 1 teaspoon of canola oil, 1 and 1/2 cups of plain soy milk, 1/2 teaspoon of lemon extract, 1 teaspoon of lemon peel, 2 tablespoons of honey, and 1/2 teaspoon of vanilla extract at home.

Steps for Making Lemon Custards and Sauce

First of all preheat your oven to 300 F. Take four ramekins and smear about three-fourths of the moulds with canola oil. Mix the tofu with half cup of soy milk in a food processor and process for about 30 seconds so that you get a smooth mixture.

Beat the eggs in a bowl so that they are properly blended. Add the lemon extract, lemon peel, honey, vanilla extract, and brown sugar. Now mix one cup of soy milk with the tofu mixture. Beat well to blend the ingredients. Arrange the custard mixture in the greased ramekins and place them in a big baking pan. Pour some hot water in the pan in such a way so that the ramekins get covered halfway from the side.

Set the Custards

Let the custards bake until they are set. When you move the ramekins slowly, the centers of the custards should shake. Baking time is about 50 minutes. Let the custards set in room temperature.
