Blueberry Cake

Homemade blueberry cakes are not only delicious, but they are nutritious as well. Here’s some simple blueberry cake recipes that you can try at home.

Blueberry cake with almond



Ingredients

Two cups of fresh or frozen blueberries
Two cups of flour
1 ½ cups of sugar
¾ cups of butter
One cup of sour cream
½ teaspoon of baking soda
Two teaspoons of baking powder
Two eggs
One teaspoon of vanilla extract
Two tablespoons of coarsely ground almonds
Pinch of salt



Method of preparation

In a bowl mix the blueberries, almond, two tablespoon of flour and set the bowl aside. In a large bowl, mix the flour, baking soda, baking, powder and salt. In a separate bowl, whisk the sugar and the butter to form a smooth paste. Add the beaten eggs, sour cream and the vanilla extract to the butter and sugar paste. Mix the ingredients until they become soft and fluffy. Add the flour to the creamy paste and blend the ingredients. On a greased pan, spread about 1/3 of the batter. Place half of the blueberry filling on top of the batter. Cover the blueberry layer with another layer of batter. Add rest of the blueberry filling and cover it with the remaining batter.




In a preheated oven, bake the cake at 350 degree Fahrenheit for about 45 minutes.

Blueberry lemon cake

Ingredients

Three cups of fresh blueberry
Two cups of all-purpose flour
Two teaspoons of baking powder
¼ teaspoon of baking soda
¼ cup of sugar
¾ cup of butter
Two large eggs
¾ cups of lemon juice
One teaspoon of lemon zest
¼ teaspoon of nutmeg powder
Pinch of salt

Method of preparation

In a bowl, coat the blueberries with sugar and nutmeg powder. Set aside the bowl. Take a bowl, add the flour, baking powder, baking soda and salt, and mix the ingredients wells. In a large bowl mix the sugar, butter, eggs, lemon juice and lemon zest and blend the ingredients to form a light and fluffy mixture. Add the flour and stir the ingredients. On a greased tray, add half the batter. Top it with the blueberries. Add the remaining batter on top of the blueberry layer. Bake in a preheated oven for about 45 minutes.
