Ingredients for Almond and Fruit Biscotti

In order to make almond and fruit biscotti you need 3/4 cup of chopped almonds, 2 and 1/2 cups of flour, 2 teaspoons of baking powder, 1 cup of sugar, 2 eggs, 1 cup of dried cherries, 1 teaspoon of almond extract, 1/2 teaspoon of salt, 1 tablespoon of milk, and 1/2 cup of butter at room temperature. You can also use properly drained maraschino cherries.

Time for Mixing

First of all you have to cream the butter and sugar so that they are nicely blended. Now one by one, add the eggs and mix well after making every addition. Add the almond extract and milk. Take another bowl and in it you have to add the other dry ingredients well. At this stage you should not add the cherries or fruits. Now you need to mix the butter mixture with the flour mixture. Next, stir in the cherries and almonds.

Step for Baking Biscotti

Heat your oven to 350 F and then use parchment for lining a nice cookie sheet. Make two equal divisions of the dough. Now you have to roll each portion of dough to make a nice oval shape. Keep the rolled out dough on the cookie sheet. The dough should be flattened evenly so that it is about one inch thick.

In the middle of the pre-heated oven place the cookie sheet and then bake for about half an hour. Then let the sheet cool down for about 5 minutes. Cut the section into strips with a knife and bake the cookies for 5 minutes. Turn them over and bake again for the same time. Cool and enjoy.
